Chewy Chocolate Chip Cookies
So I have been trying for EVER to make chewy chocolate chip cookies with no sugar. I can NEVER get the texture, taste, and chew that brown sugar adds to the cookie. With this recipe I have FINALLY found the answer. This cookie has no sugar, but tastes, feels, and chews like a big, fat, chewy, chocolate chip cookie! This is now my FAVORITE cookie I have EVER made! TRY the no sugar version. You CANNOT tell its no sugar! This is a perfect cookie! And my new addiction!
Ingredients:

| 2 1/2 c flour 1 tsp baking soda 2 tsp cornstarch 1 tsp salt 1 c margarine (melted) 1 1/2 c Splenda Granular 2 eggs 2 egg yolks 2 tsp vanilla extract 1 tsp maple extract 1 1/4 c Grain sweetened chocolate chips (SunSpire makes them. You can find them at King Soopers or Whole Foods) | 2 c + 2 Tbsp flour 1/2 tsp baking soda 2 tsp cornstarch 1 tsp salt 3/4 c margarine (melted) 1 c Brown sugar 1/2 c Sugar 1 eggs 1 egg yolks 2 tsp vanilla extract 1 1/4 c chocolate chips |
Directions:
In a bowl combine flour, cornstarch, salt, and soda. Mix and set aside. In a mixing bowl combine the melted butter, vanilla, maple extract and splenda or sugar. Mix until well combined.
While mixing on medium add in eggs and yolks one at a time until combined. Add in the flour mixture a bit at a time until everything is mixed well. Add chocolate chips and mix in with a spoon or your hands.
Line your baking sheet with parchment. I use silicone mats. (If using the no sugar recipe I doubt you need to grease your cookie sheet.) If you don’t have parchment just use a lightly greased baking sheet. (I love PAM for Baking!)
Using a cookie scoop or a table spoon, scoop out some of the mix. If using a spoon you will need to roll them with your hands. (If you want larger cookies use a standard size ice cream scoop) Abt the size of a walnut in it shell.
With your hand or a spatula flatten the cookie. The no sugar cookies will not spread so the shape and size they go in as are the same as they will be when done. The sugar cookies will spread so take that into account when flattening. Don’t make them to thin as you will lose some of the chewiness.
For the nor sugar cookies you will bake them at 300° for 15-17 minutes or until the edges BARELY start to turn darker. BARELY
For the sugar cookies bake at 325° for roughly 15 minutes or until edges are BARELY starting to turn brown. Remove from cookie sheet and let cool on wire rack.
Makes abt 26 cookies depending on how large you make them. My no sugar recipe using a cookie scoop I got 30 cookies. If you make the large cookies using an ice cream scoop you will make a lot less.
