Turkey and Bacon Carbonara
Ingredients:
8oz (1/2lb) bacon, chopped
1 1/2 – 2 c chopped cooked turkey or chicken
1/2 c parmesan cheese
1 9oz pkg fresh linguini
3 large eggs
salt/pepper to taste
5 tbsp milk
olive oil
Directions:
First off you need to chop up your bacon and your turkey or chicken. Bite size pieces.
Put about 1 tbsp olive oil in a large skillet. Add your bacon and turkey. Cook on medium until bacon is cooked and browning a little on the edges. You can cook it longer if you would like your bacon a bit more crisp.
Set your cooked bacon and turkey aside. Cook your pasta according to pkg directions. I used the fresh pasta but the dried would be fine to.
While the noodles cook mix up your egg mixture. In a small bowl combine eggs, milk and pepper if you like. whisk until combined. Set aside.
Drain your pasta and quickly return it to the same pot. You want to retain as much of the heat as possible. Pour in your bacon/turkey mixture and your egg mixture. Toss and stir to combine. Pour in your parmesan cheese, stir/toss.
Transfer to a warmed serving dish. Serve immediately. This is REALLLY yummy with fresh garlic bread!
You can sprinkle the top with extra parmesan cheese if you like. I would suggest you taste it before you salt it. Bacon and parmesan add a good bit of salt already.
