Cheesy Ham & Potato Casserole
Ingredients:
- 2 c diced cooked Ham (Turkey, Chicken, Beef, 1lb ground beef..etc.)
- 1 small onion, diced
- 1 c sour cream
- 1 10oz can cream of mushroom soup
- 1 10oz box frozen chopped broccoli, thaw
- 2 c shredded cheddar cheese
- 4 c shredded potatoes, abt 2 LARGE potatoes
Directions:
In a skillet add your meat and diced onion. cook until onion is tender and translucent. Set aside.
In a bowl combine soup, sour cream, cheese, and potatoes. Stir together.
Drain any liquid from your broccoli and add to your potato mixture. Add your meat/onion mixture and stir together.
Spray a 9×13 casserole dish or a 2.5 quart baking dish. Spread your mixture evenly into your dish and bake at 350° for abt one hour or until top is lightly golden. (I used a 2.5 quart dish and it took abt an hour. If you use a 9×13 it may cook quicker.)
