Honey Vanilla, Strawberry Freezer Jam
Ingredients
1 pkg no sugar needed Sure Jell pectin (or any other no sugar needed pectin)
3/4 c honey
1 tsp vanilla
4 lbs (4 pint containers) fresh strawberries
Directions
Wash and cut the tops off the strawberries then cut them into chunk. I just cut them in half. Put them in a large bowl. Using a potato masher, mash the strawberries until you have a slightly chunky strawberry juice. It will take some elbow grease.
Add the honey and vanilla to the strawberries and mix together.
Pour mixture into a sauce pan. Turn to medium heat. Using a whisk stir the mixture while you pour the pectin into the pan.
Bring to a full boil on medium heat stirring often.. A full boil means that it continues to boil even while you stir. Once it begins to boil stir constantly. Be careful as it thickens it might splatter on you.
Continue to boil for a full minute.
Carefully pour the mixture into the same bowl you used before.
Taste to see if you need to add sweetness. If so add splenda or sugar in small amounts until sweetened to taste.
Pour your jam into 8oz freezer safe jars. I used plastic freezer jam jars. Do not put lids on yet.
Let sit on the counter to cool to room temp. Once cool place them (no lids) in the refrigerator to get cold. Once they are cold put the lids on. Store in the refrigerator overnight, then place in the freezer.
