I have been trying figure out how to make Sugar Free Marshmallows for EVER. When you can’t eat sugar, things like simple Rice Crispy Treats and some really yummy No Bake type cookies are out of reach. I FINALLY figured out the right combination. So if you can’t or don’t want to eat sugar, this Sugar Free Marshmallows Recipe is going to make you smile! And It’s EASY!
Sugar Free Marshmallows
Ingredients:
- 6 tbsp. cold water
- 2 envelopes unflavored gelatin
- 1c Honey
- 2 tsp. vanilla
- 1/4 tsp. salt
- Cornstarch (for coating)
Directions:
In a small container add your cold water and your gelatin. Stir and Set aside to soften.
In a medium Saucepan add honey, salt, and vanilla. Heat over medium heat just until the honey liquefies and loosens. Add the gelatin and stir.
While stirring, heat over medium high until it comes to a rolling boil. Be very careful. It will be VERY hot.
Once the mixture comes to a rolling boil remove from heat. CAREFULLY pour into a stand mixer bowl. (You can use a hand mixer, but be VERY careful, use a bowl that’s really large, and I hope you have some muscle strength! LOL)
Now mix on high for about 12 minutes. I had a thought that you could use this as marshmallow crème if you mix it only halfway. I didn’t try it, but seems like it would work. For marshmallow crème mix until mixture is doubled and slowly slides off the beater when picked up. Store in a seal container in the fridge.
For Marshmallows you are looking for it to be stiff. It shouldn’t move at all from the beater when picked up. It took my mixer 12 minutes.
Once it’s done spread into a dish that’s been lightly sprayed with non-stick spray. I used an 7×11 2.2 QT baking dish. My Marshmallows came out to be about 1 1/2 inches thick. Use a larger dish for smaller marshmallows.
Once spread evenly into your dish let set for 1 hour on your countertop then transfer to the refrigerator and let cool for at least 3 hours. This will mellow the honey taste. If you don’t let it set long enough the marshmallows will be VERY VERY sweet and honey tasting.
Remove from refrigerator and dust the top with cornstarch. Use your fingers to spread the cornstarch over the top.
Invert your dish onto a cutting board. Using a wet knife cut your marshmallows into desired sizes.
Once you have them cut dust with more cornstarch making sure you get all the sides.
All Done. You have just made Homemade Sugar Free Marshmallows!
Store in the refrigerator. I am in love with these. I can’t wait to try all the recipes that I have wanted to that call for marshmallows.
